Salvador Santos Martinez owns the 3.5-hectare certified-organic farm Los Melocotones, which has just over 1 hectare planted with coffee plants. Salvador grows both IHCAFE 90 and Caturra varieties.
After picking, the coffee is delivered to the receiving and collection center at CAFESCOR, where it is depulped and fermented for 15–18 hours dry. It's then washed once to remove the mucilage, and dried on patios for 10–15 days. Salvador has received technical advice from the association, who supports the development and processing of his microlots.

Website orders are roasted and packed every Monday and picked up Tuesday by USPS for delivery. As we only roast exactly as much of each coffee as we have known orders for, please be sure and place your order no later than noon (PST) on Monday for fulfillment that week. Orders that come in later than that may not be fulfilled until the following week.
