    The town of San Marcos is within the department of Ocotepeque located in the western highlands of Honduras near the boarders with Guatemala and El Salvador. This region, with peaks reaching 2300 meters, is home to numerous cloud forests. The first inhabitants were the Maya-Chortí people, descendants of the Mayans who spoke Ch’orti, a language that is nearly extinct today. Each year they celebrate the Tz’ikin, demonstrating their gratitude to the gods for having prosperous crops and abundant water. The region is home to a natural reserve called Güisayote, meaning “abundance of squashes,” due to fertile and nutrient rich soil. of how. Because the coffee is grown at high altitudes and lower temperatures, it produces a slower maturing fruit and a denser bean, which generally will lead to greater sweetness, acidity, and complexity in the cup.

    Website orders are roasted and packed every Monday and picked up Tuesday by USPS for delivery. As we only roast exactly as much of each coffee as we have known orders for, please be sure and place your order no later than 10 AM (PST) on Monday for fulfillment that week. Orders that come in later than that may not be fulfilled until the following week.
